What do you guys eat for breakfast? (Dairy free too)

We have been nearly obsessed with this sweet potato and sausage meal for breakfast (and lunch and dinner occasionally lol)

1/2 sweet onion chopped and cooked in a skillet with butter, ~1/2 tsp salt, and a sprinkle of pepper until onions are very soft. Put into casserole dish with 2-3 lbs sweet potato cut into ~1 inch chunks. Add another 1/2 tspn salt, black pepper, and one minced garlic clove. Add oil (I’ve never measured how much, enough to coat everything) and stir. Place in oven at 450°F for 15 minutes. While that’s cooking, cook 1lb sausage in skillet until just cooked (don’t overcook). After 15 minutes, add sausage to casserole dish and stir. Place back in oven and bake until potatoes are soft (usually another 30 min) , stirring every 15 minutes.

We do add parmesan sometimes, but it’s delicious without it too and you can personalize it a lot with different spices and maybe even throw in some veggies if you’d like!

It will keep in the fridge for several days, I usually make one large batch on Sunday or Monday and it gets my husband and I through most of the week.
