Honestly, and I don’t mean to disparage your poutine, the best thing about this is the way you did the tenders. Frying is such a pain, but you need some fat.
I also currently need to avoid egg, which you used, but… I bet it would work without. I was already going to make toum (but with avocado oil). Now I think I’ll make fried tenders with it. Whenever I get around to it, I promise a post on how eggless breadless tenders work out.
