Experimented with King Arthur gluten-free flour to make Jaegerschnitzel (pork cutlets with mushroom gravy) Recipe in comments.

I used this recipe for the mushroom sauce, but subbed King Arthur measure for measure gluten-free flour instead of regular.
I also added an egg wash and gluten-free panko crumbs to the breading. Flash-fried and finished in the oven. Turned out great!
