Reduced sensitivity over time?

Hi everyone, I went gluten free about five years ago due to a sensitivity and saw an immediate change in my GI system for the better. Now, however, it seems that other things are bothering my stomach/intestines and gluten isn’t.

In the last 6 months or so, I’ve let myself have little treats here and there, like normal mozzarella sticks or a donut. I usually feel completely fine the next day, whereas last year I paid dearly for some baklava I decided to eat. On the other hand, things like green peppers give me issues every single time I eat them now, and they have done so for only about a year now.

Has this happened to anyone else? I’m thinking I will definitely keep my diet mostly gluten free, but it seems like I can have a decent amount of gluten without issues lately, so I might stop bothering with special gluten free substitutes like pastries.
