GF/DF ‘cream’ of mushroom soup

I got a good deal on mushrooms going bad. I roughly followed this recipe except 15x of everything.
Scaling the recipe had a few challenges. I had to brown the mushrooms in batches so they wouldn’t steam in the pan. I also had trouble getting a whole gallon of cashew milk to curdle. It was cold from the refrigerator which didn’t help.
