non Celiac gluten contamination

Hello, I am gluten free for health purposes due to suffering from a couple of inflammatory diseases. However I do not suffer from Celiac disease. How concern should I be with cross contamination, for example eating fries that get done in the same oil as chicken tenders and such? Is that enough to reintroduce gluten to my diet? Thanks
