I just make the full box all at once, with one extra egg (3 eggs total). Make sure to whisk all the liquids together first so you can get the eggs nice and fluffy before adding the powered mix. It’s just my partner and I eating them, so a box usually makes 6 or so very good sized pancakes (we make them on the larger side). And the batter lasts for a few days and doesn’t lose its fluffiness. It’s great for mornings where I don’t have much time. I just throw some in a pan and make sure to let it rise a bit before I flip it.
