GF white sauce and three cheese pizza. My partner says she will never leave me because of this pizza. So I got that going for me. (Recipe in comments)

Sorry for the formatting I’m on mobile. Mix 500g bread flour, I used King Arthur GF BF, 16g fine sea salt, 1/4tsp active dry yeast. Once we’ll combined mix in 365g room temp and water. Combine until dough is formed and no loose flour remain, sometimes I’ve slowly added more water to get a consistent texture. Wrap dough and allow to rise for 18 hours at room temp. Place dough onto floured work surface and work dough into a ball shape again. Separate into 3 equal pieces (can be separated into 4 if you want smaller pies but I’ve found 3 parts were easier to shape). Cover one dough ball with dishcloth/ rag to allow it to rise more at room temp. Wrap in plastic and place extra dough balls in fridge for up to 3-4 days.

White sauce: place saucepan on medium heat and add 3tbsp unsalted butter, once butters melted add 3tbsp GF flour and whisk. Lower heat to med low and whisk in 1.5-2 cups of whole milk or DF substitute (again sometimes the GF messes with the consistency so more milk is needed but slowly add in a cup-cup and a half at first). Add 1tbsp garlic powder, 1/2tbsp onion powder, 1/4 tbsp cayenne pepper(don’t add if you don’t like heat). Add sea salt and pepper to taste.

Set oven at highest temp and insert stone if you have one. I highly recommend using a stone or steel to increase the temp. If you don’t have one you must prebake the crust prior to adding toppings.

Only use freshly graded Parmesan, try to use low moisture mozzarella but you don’t have to.

Shape one dough and sprinkle on your highest quality olive oil and some garlic powder. Add a thin layer of Parmesan to give the rest of the ingredients something to hold onto. (This is the point you can pre bake your dough for 2-4 minutes if your oven doesn’t get to 500 degrees and above or you don’t have a stone/ peel). Next add sauce, this amount of sauce should be good for 2-3 pizzas depending how much you like on your pizza. Next add mozzarella, goat cheese (honey goat works great!), and Parmesan. Bake until cheese browns usually between 6-8 minutes depending again on oven temp. Remove from oven sprinkle some more olive oil(very light amount) and Parmesan.
