I decided to experiment a little bit and made gluten free chicken parmesan! I used gluten free garlic rosemary crackers in place of the bread crumbs. It was delicious

2 boxes of Mary’s gone crackers gluten free garlic rosemary crackers Gluten free flour Olive oil Mozzarella cheese, 3 cups Parmesan A bowl of eggs, thoroughly beaten Spaghetti sauce Chicken breasts or chicken thighs, skinless and boneless

Preheat the oven to 450 degrees Fahrenheit

Heat a skillet of olive oil.

Take the crackers and put them into a plastic bag. Mash them real well, then dump the contents into one bowl.

Lightly dust the chicken with the gluten free flour and then dunk it once in the eggs. Thoroughly coat the chicken before placing it in the skillet. Let it fry until golden brown on both sides before transferring to a glass baking pan.

Coat the chicken with a sauce of your choice, then add in the parmesan and mozzarella. Lightly drizzle with olive oil and put it in the oven for 20-25 minutes or until the mozzarella melts and is golden brown!
