Leftover homemade GF meatloaf slices with veggie cheeze and Sir Kensington buffalo ranch on grilled Canyon Bakehouse bread. Like a Big Mac but better.

My standard meatloaf is about 2 pounds of meat, I buy a mix of 2/3 beef to 1/3 pork at my local meat store. Then 2 eggs and 1 cup of almond meal/flour, and any seasoning. I like onions, carrots, chilli pepper powder. I bake it in a loaf pan for about 1 hr 15 min at 350 degrees.

Normally we eat the meatloaf with potatoes and a green veggie but inspiration struck me for a meatloaf sandwich today with the leftovers!
