Couple years ago we went to little Italy and got a dish like this, I worked and frankensteined a few other recipes to make this one. Choose your favorite gluten free pasta to serve on, or eat without pasta.
2 tbsp olive oil
• 1 small onion • 2 cloves minced garlic • 2 lbs shrimp thawed • 1 tbsp Italian seasoning • ½ tsp salt • Pepper to taste • ¼ tsp crushed red pepper flakes • 15 oz can diced tomatoes • 3 tbsp tomato paste • 3 oz cream cheese • ¼ cup parmesan • 9 oz bag fresh spinach • Favorite gluten free pasta
• Heat olive oil in pan, then add onions and garlic and cook till onions soft • Add shrimp and sauté till cooked, then add seasonings • Add diced tomatoes and paste, plus a little water if too thick (1/4 cup) • Add cream cheese and parmesan and stir till combined • Add spinach and still till wilted, then season with salt/pepper to taste • Serve over favorite pasta
