But I swapped the regular sugar for coconut sugar. It gave it such a caramel flavor it was insane.
I’m not sure if that’s why mine spread more than the recipe photo, because I know sugar changes the texture of cookies, but these were crispy on the edges and chewy in the middle. They sat in a Tupperware overnight and I think they were just as good today, with some cookies I’ve made in the past losing texture overnight.
I bet vegan butter and a flax egg would also work too, going to try that next time.
