I cooked the pasta, the bag is in a few European languages and English, but I couldn’t find a listed time. I checked back at about 9 minutes and I was happy with the texture.
—> I’m in America and the pasta shipped to me in 5 days after purchase
For the sauce
~ 2tbs of butter (or butter substitute, olive oil would work nicely too)
1/4-1/2 of a small onion sliced
As much garlic as you like (I did probably three or four cloves?)
Dash of Italian seasoning
As much Calabrian chili oil as you like (I probably used about 1.5 to 2tbs of chili oil with the seeds and chilis. I’d say it was a 3 out of 5 spicy for me)
~ 2tbs of the pasta water
Pecorino romano, Parm, any cheese like that will do
Cook the pasta to al dente, drain, and reserve just a little pasta water. Caramelize the onions in the butter. When they are to your liking, add the garlic, Calabrian chili oil, salt, pepper, and Italian seasoning to taste. Cook for about five minutes so everyone gets to know everyone. Add your pasta water, stir. Put your drained pasta in the sauce and stir until everyone is fully coated and the pasta is nice and firm (maybe 2-3 minutes). Serve up your desired portion and top with cheese!
This is a very thin sauce and I didn’t make a lot of it and it was very satisfying. You can riff on this by adding some halved cherry tomato’s for brightness and acidity, I really love it that way too.
Hope you all enjoy!
Edit: ugh I spelled orecchiette wrong. This is what four years Italian language courses gets you, folks.
Edit 2: RIP formatting I have no idea what I’m doing on mobile
