I really want to make some Risotto and I remembered something, glutinous rice? Does Arborio rice have gluten? Can we have Risotto if we’re making it from scratch? I’m a pretty good cook, I started off as a Culinary Arts Major and I thought it’d be nice to make some Risotto if I can. I basically just want to make some Cacio e Pepe, it’s just Parmesan and black pepper. I’ll be cooking with white wine or chicken stock, maybe both.
