Doing a Very Strict GLUTEN Elimination Diet for 6 Weeks to Rule Out Celiac. What are some GOOD CARB SOURCES that I’d be 100% in the Clear?

Doc wants me to do an elimination diet of gluten to rule out Celiac or high gluten intolerance. I’m OCD so I don’t even want to mess with borderline foods. Trying to put together a strict meal plan. Proteins and fats are easy, but need some carb options that are 100% not going to affect my results. For example, I hear sometimes rice affects some people even though its GF.
