Chicken and dumplings!

Vague recipe-ish cooking method on top of the stove:

Steamed 2 frozen boneless/skinless chicken thighs. Removed to a cutting board, added a chopped onion to the water/chicken drippings and seasoned with poultry seasoning and seasoned salt. When water was mostly cooked off I added a couple cloves of chopped garlic, then almost a pound of frozen chopped mixed veggies (corn, green beans, peas, carrots). I let those cook for a bit, stirring occasionally, while I chopped the chicken thighs. Added chicken, then 4 cups homemade chicken stock and brought to a boil.

I used this recipe for the dumplings but used King Arthur All Purpose GF flour and margarine. When the stock came to a boil I dropped the dumplings in by the tablespoon, then let cook for a few minutes until they were solid in the center. Taste and adjust seasoning and enjoy!
