Anyone have tips for making a cookie cake?

My husband’s birthday is in a couple of days and I told him I would bake him whatever kind of cake he wanted. Well..he said he wanted a cookie cake..a giant cookie instead of a cake. I’ve only tried to make a massive cookie once before but it didn’t work out. The outside edges were burnt and the middle was not cooking. Would it be possible to use a gluten free cookie mix (like bobs red mill or gf pillsbury) and just make a giant cookie with it? Any recipes, tips, or advice would be super appreciated!
