Here’s the recipe, guys! It’s originally a recipe for ‘normal’ flour, but I thought I might give GF flour a try – and it worked! I used Lidl’s Belbake bread and pizza flour. Mix 200ml of warm milk (I used soy) with 7g of dry yeast and add it to 800g of flour. Add 1 teaspoon of sugar and 2 teaspoons of salt. Mix it a bit before adding 200ml of warm water and 50ml of oil. Mix the mass into firm dough without adding any more flour. It needs to be mixed for about 15 minutes with hand. Leave it in a bowl covered with plastic foil and let it rest for 30 minutes. You can create any kind of shape you prefer: rolls, buns, pretzels…
For the ‘laugen’ part you need to boil 2l of water with 5-6 spoons of baking soda, and put each of the buns in this pot for about 10 seconds. Afterwards, put them on a tray with oven paper. You can sprinkle the bread with sea salt or sesame. Place the tray into a preheated oven on 200C and bake for 20 minutes.
