Gluten free sourdough fail. Any pointers for a newbie?

Bread is completely different. You need to either buy or make your own sourdough starter.

I made some using plain gluten free flour blend (Doves Farm), bottled water, and a tbsp of kombucha as booster.

Keep feeding it and in a warm place.

I have tried making GF sourdough but it always comes down dense, so I am still experimenting by changing the flour blend.
