GF cheese doughnuts

Here is the recipe for the doughnuts.


100g unsalted butter

1 tsp caster sugar

150g gluten-free flour

1 tsp xanthan gum

100g grated parmesan

4 eggs – beaten


  1. Put the butter+300ml water+sugar into a saucepan and bring to boil (make sure butter has melted), then turn heat down and simmer.

  2. Mix flour+xanthan gum+a pinch of salt then add to the butter mixture and beat well with a wooden spoon until you have a smooth paste. Remove from heat and place on a steady surface.

  3. Add parmesan to the mixture and mix in , then slowly add the eggs in several batches, mix with the wooden spoon or electric whisk if you have one. After adding a bit of egg mix until incorporated and so on until you add all the eggs. You’ll now have a smooth, sticky, thick batter.

  4. Deep fry the doughnuts until golden. Serve with grated parmesan.
