Im a baker at a small cafe and have decided to challenge everything I know about baking by nosediving into the gluten free void!
The owner of the cafe asked me to produce some gluten-sensitive pastries (we arent a gluten free environment), and I thought I’d ask you a question I should have asked before I began all my research…
What pastries/sweets do you crave but have a hard time finding? What gluten free pastries have grocery stores mucked up?
Alternatively, whats the last thing you’d want to see as the gluten sensitive option in a bakery?
