I’m not the OP but a few GF pizza tricks:
Parbake the crust prior to adding anything (That just means bake it for like 5-6 minutes first).
Then after the toppings have been added and it’s baked slide the whole thing onto a hot sprayed or oil skillet and saute the bottom at high heat until brown and crispy. This method mimics the high heat you’d get from a pizza oven to get the crust crispy enough that you can hold it with one hand and not all floppy or soft..
Note: I make 2 smaller sized pizzas instead of 1 large one, which makes them easier to slide into a frying pan.
