I make an awesome deep dish:
2 cups warm water + 1 T yeast – mix and let get foamy
7 ounces sorghum flour
7 ounces tapioca starch
7 ounces white rice flour
1 ounce gelatin
1.5 t. salt
Mix the dry ingredients. Add the water + yeast and 6 T. Olive Oil. I use bread hooks on my hand mixer. It will be very sticky. Let rise for 30 minutes to an hour.
Pour a generous amount (like 4 T.) of olive oil in whatever pan you’re using. (I use a half sheet cookie sheet that has sides on it. You could use a couple of cast iron pans.) Dump the dough in the pan and spread it out with oiled fingers. Let rise again – another 30 minutes to an hour, depending on how warm your house is.
Preheat oven to 500 degrees. Bake crust for 5 minutes. Take it out. Top it with your sauce and toppings. Lower heat to 450. Pop it back in. Bake until cheese is beginning to brown – 12-15 minutes.
