Before you ask about the oatmeal in this recipe and how it’s not paleo approved, we’re actually going to be using a different kind of ‘oatmeal’ through a low-carb, high-fat alternative such as flaxseeds. Flaxseeds are an excellent source of dietary fiber and heart-healthy omega-3 fatty acids, not to mention it pairs excellently with other paleo baking ingredients such as almond flour and coconut flour. I absolutely love the texture of these pancakes because you can tell it’s made with quality ingredients and not just refined flour and sugar.
