Gluten sensitivity?

Hi, I’ve been getting sick this past week every time I’ve eaten seitan. From what I’ve seen, it’s the common factor every time I got diarrhea. I eat seitan and a few hours later I’m sick. I’m wondering if maybe I’m sensitive to gluten but didn’t know it before now because I wasn’t eating food as high in gluten as seitan is (which is made from like 90% gluten flour).

Are there people here to whom the same thing has happened? Is there a test for gluten intolerance or sensitivity?
