Gluten Free Pumpkin Recipes

My go to: Coffee mug or tiny bowl 2tbsp peanut butter powder 1tbsp pumpkin purée 1/4 tsp baking powder 1 tbsp egg (if vegan flax or chia will work) 1 pack stevia Add LOTS of Pumpkin spice

Mix and add water 1tbsp at a time until batter consistency reached

Microwave 1 min

Also very easy to omit pumpkin spice and just go pb flavor. Almond poppy version: add almond extract and poppy seeds. Blueberry: vanilla extract and blueberries VERY VERSATILE to fit most any flavors of a mug cake!
