So, I was wondering… I have recently been diagnosed with Gluten Intolerance. My doctor and I found out that every time I ate any kind of bread or anything containing wheat, I would have to lock myself in the bathroom during hours, feel terribly mood-wise and end horribly sleepy. During one of my first Gluten-Free mistake (apparently Macaroons aren’t always made with almond flour… For some reason) I started thinking: Does this Allergy/Intolerance has a specific origin? Is it developed through time? Is there a genetic component to it?
Any ideas? I’ve googled it but came out more confused than when I started.
