Shredded Potato Based/Cup, Eggs, Canadian Bacon, Chives and Cheddar Cheese, baked in Muffin Tins.

I bought some shredded potatoes and then melted some dairy free butter and then spread it into the muffin tins. I filled each muffin tin with some shredded potatoes. Then I baked them about 30 minutes at 450 degrees until they were golden brown around the edges. Then put in chopped up Canadian bacon, cracked eggs, and then sprinkled chives and cheddar cheese on top.

Yes folk, I am badass in the kitchen, it’s about time you all said that.
