Gluten free sourdough success!

I was inspired to start my own gluten free sourdough starter after seeing a post on here a few weeks ago. I’ve seen that others have been doing the same, so I wanted to share my experience.

I used the King Arthur Flour sourdough starter recipe. I also use the day by day guide from as a check in for what my starter should look like. I ended up doing 60g water/60g Measure for Measure flour and feeding the starter twice a day. (Looking back, I’m not sure why I did that or if it helped, but the starter did turn out great.)

Yesterday, I baked the sandwich bread from this recipe, using the sourdough modifications at the bottom. I was a little overwhelmed finding a recipe, since I don’t make my own flour blends, and a lot of the gf bread recipes out there require you to do that. I also couldn’t find the KAF All Purpose GF flour that the recipe requires, so I just decided to take a risk and go for it with Cup4Cup (and then I omitted xanthum gum). Honestly, I am THRILLED with how it came out. I’ve baked a lot gluten free, but mainly cakes, biscuits, occasionally cookies or pie, but never bread. I was prepared for this to be crumbly and dry, but it was wonderful.

I’m going to try this recipe again with the right flour, but I would be thrilled if it came out exactly like this every time.
