Gluten-free caramelized onion and mushrooms quiche

I used Dove’s farm gram flour as a flour substitute, it works very well but it needs a bit more water than plain gf flour

Here’s the recipe



  • Sieve the flour into a large bowl, then rub in the butter with the tips of your fingers until the mixture resembles breadcrumbs.

  • Add 7 tablespoons of cold water, stirring with a knife until it forms a rough dough.

  • Use your hands to bring it together into a ball, then wrap in cling film and pop in the fridge for around 30 minutes to rest. The dough might feel a bit moist, but don’t worry it will soak up the water when resting.

If i’m doing a tomato filling I usually add about a tbsp of dried oregano to the flour before adding the butter.
