Marinate wings in buffalo sauce over night
Breading: 6 parts fine rice flour, 1 parts tapioca, 2 parts potato starch. Season to taste with Bad Byron’s butt rub BBQ seasoning(2 tbsp for us). Toss wings in breading and then into fryer. We only do 1 layer because we like single breaded.
Fry for 9 minutes in hot peanut oil.
